Snow Goose Jalapeno Poppers | Wild Table

Snow goose has a rap for being a trash game meat.  I’m here to let you know it absolutely is not! Snow goose, when cooked correctly, can be excellent eating.  They feast mainly on corn and other vegetables making them a tasty bird with a milder meat flavor.  Pair them with some fresh jalapenos and crispy bacon and you have a winning snow goose recipe.  Jalapeno poppers are a favorite of the outdoor community, and this simple snow goose jalapeno poppers recipe is guaranteed to disappear quickly at the dinner table or in hunt camp.

Tips and Tricks

  • This recipe works well for any type of lean wild game meat.
  • Try mixing in some shredded cheddar with your cream cheese.
  • Pull the stems free of the jalapeno before cutting it in half and removing the inner veins and seeds.
  • To prevent your jalapenos from being too spicy, make sure you remove all of the inner veins and seeds!
  • Use your favorite marinade, I prefer Allegros.

Ingredients

  • 4-6 Snow Goose Breasts
  • Allegros marinade or marinade of choice
  • 6-9 Jalapeños
  • Bacon
  • BBQ sauce
  • One block of Cream cheese
  • Toothpicks

Directions

  • Slice snow goose breasts into thirds and marinate for a few hours to overnight.
  • Slice Jalapenos in half. Remove seeds and inner veins.
  • Fill each jalapeno half with cream cheese.
  • Top with one marinated slice of snow goose breast and wrap with half a slice of bacon.
  • Secure with toothpick down the middle.
  • Put poppers on grill, turning occasionally and brush on BBQ when close to thoroughly cooked.
  • Serve fresh, hot off the grill.
