Venison Stir Fry | Wild Table

Have some roast or backstrap in your freezer you need to use up before this next hunting season? This quick and easy meal gives you options for any type of wild game meat. We chose venison from an axis deer for this recipe, but you can really make this with any dark meat.  Plenty of flavor and all prepared in under thirty minutes make Venison Stir Fry a weeknight winner in any house!

Ingredients

  • 1 lb. venison sliced into medallions
  • 1 head of broccoli
  • 1 radicchio
  • 1 shallot
  • 1 package mushrooms
  • 4 cloves garlic
  • 3 TBSP Black Bean Garlic Sauce
  • 3 packages Shirataki Noodles
  • 2 TBSP sliced ginger
  • 1 lime
  • 2 oz cilantro

Instructions

  1. Slice venison into medallions- For this recipe, we used loins and backstrap from axis deer. 
  2. Add Olive oil to large pan over medium-high heat.
  3. Get pan hot then briefly fry meat, turning after 1-2 minutes. Remove meat from the pan.
  4. Once meat is removed, add splash of vegetable oil to pan and heat. We will add the next few ingredients in waves to let them cook down as needed. 
  5. Add Garlic, Shallots and Radicchio and cook together for a 3-4 minutes. 
  6. Add ginger, broccoli and mushrooms and cook for another 3-4 minutes. 
  7. While veggies are cooking, boil noodles for 3 minutes and strain.
  8. Once all veggies are cooked, add noodles to the large pan and add black bean garlic sauce- 3 TBSP.
  9. Toss veggies and noodles with sauce.
  10. Stir in meat.
  11. Squeeze lime juice over dish, top with fresh cilantro and serve!
