Wild Turkey and Veggie Mac Bowl

Do you have a bunch of turkey you need to use? Maybe you need to use last spring’s wild turkey harvest and free up some precious freezer space.  Or do you have a bunch of leftover Thanksgiving turkey this week? The Turkey and Veggie Mac Bowl is a great dish that is fast to make and a delicious leftover to enjoy the next day. 

As a bonus, it is a crowd pleaser for families with kids. If you’re not into measuring your ingredients, this is the dish for you. Measurements are more of a “guideline” and very forgiving. And the veggies can be easily substituted for others – green onions and jalapenos would be tasty as well!


Ingredients

  • 1 cooked turkey breast, cubed
  • 1/2 onion, diced
  • 1 cup bell pepper (tip: use a mix of green, red, and orange!)
  • 1/2 cup zucchini, diced
  • 1/2 cup asparagus, chopped
  • 2 cups cooked elbow noodles
  • 1/4 cup parmesan cheese
  • Heaping handful of spinach

Instructions

  1. Saute veggies for 2-3 minutes over medium heat
  2. Add in turkey cubes, cook another 2-3 minutes
  3. Add spinach, cover with a lid, and cook for 1-2 minutes
  4. Mix in cooked noodles and parmesan cheese
