Pulled Canada Goose | Wild Table

Canada Goose is a tricky bird to get right. However, its properties make it a prime candidate for low and slow cooking methods. Slow cooking methods undo the miles flown and millions of wing beats the meat endures before it reaches the plate. When complete, this Pulled Canada Goose recipe delivers a tender, flavorful experience that will give you additional motivation to get back out to chase these amazing birds again! Enjoy! 

Ingredients

  • 3 - 4 lbs Goose Breast Meat, Whole
  • 1/3 Cup Honey
  • 3 Cloves Garlic - Chopped
  • 3/4 Cup BBQ Sauce
  • 3/4 Cup Apple Cider Vinegar
  • 1 Large white onion - chopped
  • BBQ or Rib Rub
  • Buns if you want to make sandwiches

Instructions

  1. Trim silver skin and other fat off breast meat
  2. Soak breast meat in a bowl of water in the fridge for 24 hours
  3. Pull meat from water, pat dry with paper towel and season with favorite BBQ or rib rub
  4. Sear all sides of meat in a cast iron pan over medium high heat
  5. Add meat, honey, garlic, apple cider vinegar, and onion to a crock pot and let cook on low for 7 hours or until starting to come apart easily
  6. Shred meat using forks and put back in crock pot for another hour
  7. Strain meat from liquid and mix with BBQ sauce and serve
  8. Can be served on a bun, or as the meat alone.
