Pulled Canada Goose | Wild Table
Canada Goose is a tricky bird to get right. However, its properties make it a prime candidate for low and slow cooking methods. Ingredients
- 3 - 4 lbs Goose Breast Meat, Whole
- 1/3 Cup Honey
- 3 Cloves Garlic - Chopped
- 3/4 Cup BBQ Sauce
- 3/4 Cup Apple Cider Vinegar
- 1 Large white onion - chopped
- BBQ or Rib Rub
- Buns if you want to make sandwiches
Instructions
- Trim silver skin and other fat off breast meat
- Soak breast meat in a bowl of water in the fridge for 24 hours
- Pull meat from water, pat dry with paper towel and season with favorite BBQ or rib rub
- Sear all sides of meat in a cast iron pan over medium high heat
- Add meat, honey, garlic, apple cider vinegar, and onion to a crock pot and let cook on low for 7 hours or until starting to come apart easily
- Shred meat using forks and put back in crock pot for another hour
- Strain meat from liquid and mix with BBQ sauce and serve
- Can be served on a bun, or as the meat alone.
