Slow Cooked Aoudad Tacos | Wild Table

Ah, the adventure and delight of preparing field-to-table Aoudad Tacos - a true culinary journey from the wilderness to the home kitchen. Let's embark on this exciting process.

First, we'll discuss the hunt process, which is a significant part of this dish. Aoudad, also known as Barbary sheep, are rugged and hardy creatures that inhabit difficult terrains, mainly rugged hills and mountains. Hunting these animals requires patience, skill, and respect for nature. The hunter uses their knowledge of the Aoudad's habits and habitats; stalking these elusive animals often necessitates trekking through challenging environments, typically during dawn or dusk when they're most active. Remember, hunting is a primal and respectful engagement with nature that requires a trained professional or seasoned guide.

Once the Aoudad has been humanely and respectfully hunted, the process of field dressing commences. This is essential in preserving the quality and flavor of the meat. The appropriate tools - a sharp hunting knife, rubber gloves, zip ties, and a high-quality cooler - should be at your disposal for a streamlined process.

Serves 2-3 (easy to multiply, the only restriction is the size of your slow cooker)

Ingredients

Slow Cooker

  • 1 pound Aoudad meat (debone and remove all silver skin)
  • 1 tsp black pepper
  • 1 cup chicken broth
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 2 garlic cloves, finely sliced
  • ½ large onion, sliced
  • ½ Tbsp oregano
  • 1 tsp tumeric

Assembly

  • Taco toppings to taste (cilantro, sour cream, hot sauce, lime, etc.)
  • Corn tortillas (2-3 per person)

Instructions

  1. Put all slow cooker ingredients into slow cooker. If meat is not covered by broth, add enough water to cover.
  2. Cover with lid and cook on low for 6-8 hours
  3. Once cooked, remove meat and shred. Meat should fall apart pretty easy using just your hands or two forks
  4. Return meat to slow cooker until ready to serve
  5. 15-20 minutes before you are ready to eat, preheat your oven to 350 degrees Fahrenheit 
  6. Wrap tortillas in foil and place in oven. Warm for 10 minutes. This makes them more pliable and easier to assemble.
  7. Top your tortillas with Aoudad and your favorite taco toppings.
  8. Enjoy!
