Sallie's Wild Pheasant Sandwiches

Pheasant is one of my favorite wild game meats to eat and pheasant sandwiches are one of my favorite ways to prepare it! This ROOSTER twist on a classic chicken salad sandwich is a quick and easy way to use any leftover shredded pheasant for a tasty lunch. 

Serve it on a bun, your favorite type of bread, or spread it on a cracker! 

Ingredients

  • 3 cups cooked pheasant, finely chopped
  • 2 hard-boiled eggs, finely chopped
  • 2 carrots, grated
  • 1/2 medium onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 tsp. sweet pickle relish
  • Salt and pepper
  • Mayonnaise or salad dressing 

Instructions

  1. Mix all ingredients together. 
  2. Add dressing to taste.
